Vegetable Kurma


Vegetable Kurma For Parotta:
Ingredients:
Big onion-1 cut lengthwise,green chilly-3,tomato-2,carrot-1 cut,beans-4 cut,green peas-1 cup,potato-1 cut,cauliflower-1/2,capsicum-1 cut,ginger-garlic paste-1tsp.,garlic-7 clovettes,oil,ani seeds-2tsp.,small onion-4,grated coconut-1 cup,chinnamom-2,cloves-1,leaves-1,kasakasa-1tsp,red chilly powder-1tsp(depends on karam you like).,red chilly-2,cashew-5,fried gram-1tsp.,salt,curry leaves,corrionder leaves.
1.Keep a thick bottomed pan in stove and pour oil and heat.Add cut onion and fry for 3 min.
2.Add cut tomato and fry for 2 min.Add red chilly,split green chilly and fry.
3.Add ginger-garlic paste and mix.Add all the cut vegetables and fry for 5 min.
4.Add red chilly powder,salt,water and allow to cook for 15 min.
5.Meanwhile grind coconut grate,ani seeds,chinnamom,cloves,small onion,fried gram,kasa kasa,cahew to fine paste and keep aside.
6.After vegetable is cooked add this paste to this and mix well.
7.Allow to boil for 10 min.
8.When the kurma starts thickening turn off stove nd add chopped curry leaves and corrionder leaves.
9.The kurma is ready to serve with parotta.Perfect combination for parotta,chapathi,poori.Easy to make too.Try and share your suggestion.
