Baby Pumpkin Adai with Avial:
Today I tried this for dinner.Came good.I like to share this here.
Ingredients:
For Adai:
Toordal-1cup(50gms),gram dal-1/2cup,moong dal-1/2cup,urad dal-2tsp,boiled rice-2cups,asafotida powder-1tsp,chilly-20,Salt,curry leaves,coconut oil,chopped small and big onions-2 cups.
Soak all dals in water for 3 hrs.Soak rice separately for 5 hrs.Grind rice first and dals in grinder. Rice should be of fine paste,dal should be rough paste.Take it out and keep aside.Place chilly,salt in mixer grinder and make powder.Add this to the ground substance.Add asafotida powder,curry leaves.cut and grate baby pumpkin and add thiis to the batter directly and mix well.Add chopped onions and mix well.Now the batter is ready to make adai.Keep tawa on the stove and heat.Spread a ladle of batter on it and spread round shape.allow to boil.Pour coconut oil on the sides.Turn and boil for 5 min.Take out and keep in the plate.Delicious adai is ready to enjoy.Avial is perfect combination for adai.
For Avial:
Ingredients:
Carrot-1.potato-1,beans-4,broad beans-4,cabbage-small piece,plantain -1,cauliflower-5 florets,pumpkin-4pieces,drum stick-1.Any other vegetabes you prefer can be added,butter milk-1cup,grated coconut-1 cup,green chilly-2,jeera-1tsp,onion-4 small,coconut oil,mustard,urad dal,curry leaves,Salt.
Cut all veg. and pressure cook it.Keep the boiled veg. in a thick bottomed pan with water add reqd. salt . Make coconut paste with green chilly,jeera,small onion and add this to the vegetables and cook for 5 min.Then add butter milk and turn off stove.Place a pan on the stove and pour coconut oil and heat.Add mustard and allow to crack,then add urad dal and fry.then add curry leaves.Pour this on the avial.Delicious avial is ready.Serve with adai.
It is watery.If you need gravy like ,dissolve rice flour in water and add to avial and keep in stove for 5 min.Gravy like avial is obtained.
