Brinjal Masaal


Brinjal Masaal:

Ingredients:
Fresh Brinjal Cut lengthwise-1cup,Grated coconut-1cup,Jeera-1tsp,Small onion-5,oil-2tsp,mustard,urad dal-1tsp,chopped onion-1/2cup,red chilly-3,Salt to taste,Curry leaves.
1.In the mixie jar place grated coconut,Jeera,Small onion,salt,Red chilly and grind to fine paste by adding water.Keep this aside.
2.Place a pan on the stove,Pour oil and heat.Put mustard and allow to crack.
3.Then add urad dal and fry till brown,then add curry leaves,chopped big onion and fry for 2 min.
4.Then add ground paste and stir well.
5.To it put brinjal and allow to boil with constant stirring.
6.Keep it till the brinjal cook well and becomes dry.
Brinjal masaal is ready to serve with any rice.
Instead Jeera,Aniseeds may be used to give different taste.
